We are a unique look to the Jersey Shore food scene. Opening in March of 2013 The Establishment at 100 prides itself in using the farm to fork philosophy as much as possible. Working with the local farmers of the area we design our menu around the season and what you can find that is local and fresh. All meat, poultry and game is certified all natural, antibiotic and hormone free. Out of the sea we use only fresh wild caught local fish and seafood. From the kitchen you can find an eclectic mix of modern day American based cuisine with the early highlights being our Spicy Pork Meatballs, Burnt Cardamom Carrots and Grilled Hanger Steak. We have a unique creative approach to cooking along with the guarantee of a quality product that is presented on your plate each and every time you order. From the bar you will find a great blend of reasonably priced lesser known wines that are sure to impress. We offer a great selection of the nation's top craft beers along with a well designed hand crafted modern day cocktail list. We are a casual upscale restaurant that prides itself on serving top quality food and beverage at affordable prices. If you, as a customer, aren't happy then The Establishment isn't either. Owner / Executive Chef
From an early age Andrew found his love of restaurants at his childhood home in Long Island, New York. Starting at busser and bar back Andrew moved through the ranks of the front of the house before leaving for college. It was apparent before the move that he one day wanted to own his own restaurant. After graduating from Johnson & Wales Providence, RI he was a server at a high end Italian restaurant on the East Side. When a pantry position opened in the kitchen Andrew approached the owners and asked for a shot. From there he never looked back, being trained in the "school of hard knocks" from an all Brazilian staff he learned the essentials of how to properly cook and run a restaurant kitchen. Chasing his college sweetheart he moved to the Jersey Shore, a few years later came the marriage and then a baby boy. Without the loving support of his wife and family The Establishment would never be. A life long ambition became a reality in late January of 2013 and the roller coaster of a lifetime took off. With the many ups and downs it faced in the first year it was his rock Sarah who got through it with him right by his side. Andrew prides himself on his work ethic, passion for fresh all natural ingredients and the ability to create something out of nothing. You'll never know what you will find on any given day from this wild card.

Matt was another student of the school of hard knocks, having started as a dishwasher at a ripe age of 13 he quickly excelled through the ranks of the back of the house. He had a long career at the famous Braca Café in Sea Isle City where before his departure was the Executive Chef responsible for the great reputation the restaurant had grown to achieve. Andrew met Matt while working at Braca's and quickly realized that together they were a force to reckoned with. Luckily he agreed to come onboard for the wild ride that today is The Establishment. Dedication, hard work and loyalty are an understatement of what Matt is. Day after day the creativity flows through his veins and is fully shown in his culinary abilities. Having created dishes such as Red Curry Chowder which went on to win back to back titles in the Sea Isle City chowder cook off, and is now highly sought after when its on The Establishment's menu is only one of Matt's signature specialties. Give him something to cook and he will deliver something incredible in return.
